This simple sauce adds some spunk to rice and beans or can be added to chicken.
1 bag of thawed Mirepoix

1 sliced onion
2 tbsp of tomato paste
2 tbsp of vinegar
¼ cup of water
Throw everything into a sauce pan.
Bring the ingredients to a boil.
Then, cook on low for about 30 minutes.
